Five dinners that work when you're tired, the baby's fussy, and you still want to eat well

Nick & Sarah: NO PEANUTS, NO TREE NUTS — in any form. No almond flour, no walnut oil, no cashew cream, no Nutella, no pine nuts, no pesto with nuts. Check every condiment, every sauce, every "may contain" statement.
Nick: Also avoids lentils and peas (all types).
Sarah: Milk allergy — cheese is fine (feta, mozzarella, parmesan, blue cheese, etc.), but no cream sauces, no milk-based soups, no dairy-heavy desserts. Olive oil and plant butter work for her swaps.
Wilson: 6 months old — starting solids. These recipes intentionally include components that mash well.
Every dinner here follows the same philosophy: one pan or one pot, minimal cleanup, big flavor. Most are done in 30-40 minutes flat. A few benefit from Sunday batch cooking (Bolognese, soups) — make a double batch and you've got Wednesday covered too. Each meal has a Wilson-friendly component: something soft, simple, and unseasoned that mashes easily.
While you're in Bolognese mode, make one of these too. They freeze perfectly and turn a zero-energy night into a real dinner.
Chicken Tortilla Soup — shred the chicken, freeze the base. Reheat + add tortilla strips + avocado. Nut-free, dairy-free for Sarah.
Tomato Ginger Chicken and Rice Soup — one pot, freezes beautifully. Ginger's good for digestion (Nick's gut protocol).
Carrot Ginger Soup — silky, naturally sweet, blends into baby food effortlessly.
